La cântatul cocoșului mă  trezeam cu o foame de lup inspirată de aerul curat și munca din ziua  anterioară. Țin minte că mergeam în grădină, unde parcă îmi făcea cu  ochiul&lt;b style="mso-bidi-font-weight: normal;"&gt;,&lt;/b&gt; ademenindu-mă&lt;b style="mso-bidi-font-weight: normal;"&gt;, &lt;/b&gt;câte o roșie mare și suculentă, îndelung mângâiată de razele soarelui. Cu excepția acelor vizite pe  care i le făceam bunicului și care s-au rărit în timp, mi-am petrecut  viața în oraș – în centrul orașului Baia Mare –, unde unii nici nu stiu  cum arată o vacă sau o găină în realitate. M-am specializat în controlul  și expertiza produselor alimentare și am aflat ce sunt aditivii  alimentari (E-urile), cum decurge procesul de fabricație al produselor  alimentare și multe secrete din domeniu. &lt;/span&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0cm; text-align: justify;"&gt;&lt;span lang="RO" style="font-family: &amp;quot;Times New Roman&amp;quot;,&amp;quot;serif&amp;quot;; font-size: 12pt;"&gt;Tristețea  mea reiese din informațiile care mi se relevă în contactul cu cei din  jur, când îmi dau seama că pur și simplu „întâlnirile” lor cu produsele  tradiționale românești sunt rare. Când cumpărăm o mașină de spălat sau  un telefon mobil ne uităm la toate specificațiile dar când ne alegem  alimentele nu suntem atât de interesați. Economia țării e într-o  prăpastie din care nu ne vom ridica fără a ne întoarce înspre  producătorii proprii. &lt;/span&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0cm; text-align: justify;"&gt;&lt;span lang="RO" style="font-family: &amp;quot;Times New Roman&amp;quot;,&amp;quot;serif&amp;quot;; font-size: 12pt;"&gt;În Baia Mare, &lt;b&gt;real,- Hypermarket&lt;/b&gt;  organizează târgul producătorilor locali. Pune la dispoziția  consumatorilor o gamă variată de produse alimentare românești. Am mers  în&lt;b&gt; hypermarketul real,-&lt;/b&gt; și am verificat oferta producătorilor  locali. Am întâlnit produse de foarte bună calitate începând cu  prăjituri, cozonaci, produse lactate, produse din carne de porc și vită,  produse de patiserie și panificație, fructe, legume. Prețurile sunt, în  general, puțin mai mari decât ale produselor procesate industrial însă,  de data aceasta, în calitate de specialist, vă spun că nu se compară.  Am avut norocul să am pe cineva în mediul rural și să pot face o  comparație relevantă. Aceste produse sunt sănătoase, au proprietăți  nutritive adecvate și sunt foarte gustoase. &lt;/span&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0cm; text-align: justify;"&gt;&lt;span lang="RO" style="font-family: &amp;quot;Times New Roman&amp;quot;,&amp;quot;serif&amp;quot;; font-size: 12pt;"&gt;În  Baia Mare se organizează de câțiva ani un târg al producătorilor locali  chiar în centrul orașului. De asemenea, în ultima săptămână a lunii  septembrie au loc, tot acolo, Serbările Toamnei; se adună meșteri  populari, producători locali și artizani care ne prezintă produsele lor  100% românești, iar noi beneficiem de produse tradiționale, sănătoase și  de calitate ajutând economia locală, regională și națională. Sper ca  inițiativele de acest gen să fie apreciate și adoptate în cât mai multe  regiuni și mă bucur ca hypermarketurile real,- își îndreaptă atenția în  această direcție și acționează prin programul &lt;i&gt;&lt;b&gt;„Produceți românește, vindem românește”.&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0cm; text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0cm; text-align: justify;"&gt;&lt;span lang="RO" style="font-family: &amp;quot;Times New Roman&amp;quot;,&amp;quot;serif&amp;quot;; font-size: 12pt;"&gt;Revin  la bunicul meu, care e un moșneag simpatic și foarte harnic, dar pe  care nu îl pot vizita atât de des pe cât aș vrea. Nu stiam cum sunt dar am ramas placut impresionata de aceasta varietate de ciuperci.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Au un aspect putin diferit de ciupercile cu care sunt eu obisnuita si o textura interesanta. Absorb aromele ingredientelor din preajma lor, gustul lor specific nefiind foarte pronuntat. Textura lor e interesanta si mi-a placut mult senzatia pe care o dau cand le mananci. Sunt maricele, subtirele, plate, translucide si de culoare gri inchis - negru. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;"Urechile de lemn" cresc pe copaci. De cele mai multe ori este necesara inmuierea lor in apa inainte de a fi preparate deoarece pot fi rehidratate daca le achizitionam uscate. Denumirea stiintifica a plantei este Auricularia Polytricha, iar in limba chineza sunt cunoscute si sub denumirea de urechi norisor, ciuperci de copac sau ciuperci negre. In engleza le gasiti sub denumirea "wood ear". Denumirea generica "urechi de lemn" mai include si specia Auricularia auricula-judae sau "urechea lui Iuda".&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;a href="https://lh6.googleusercontent.com/-3irhJED-Zzo/TYOlq0p3w6I/AAAAAAAAAXk/nlhag7fRVJM/s1600/woodears_rehydrated.jpg" imageanchor="1" style="clear: right; float: right; margin-bottom: 1em; margin-left: 1em;"&gt;&lt;img border="0" height="213" src="https://lh6.googleusercontent.com/-3irhJED-Zzo/TYOlq0p3w6I/AAAAAAAAAXk/nlhag7fRVJM/s320/woodears_rehydrated.jpg" width="320" /&gt;&lt;/a&gt;Din punct de vedere nutritiv urechile de lemn au un continut substantial de proteine, fier si vitamine. Se crede ca au proprietati anticoagulante si nu este indicat consumul lor in exces. De regula din meniul unui vegetarian sunt excluse alimente precum produsele de origine animala printre care se numara si mezelurile, pestele, crustaceele etc.&lt;br /&gt;&lt;br /&gt;Dieta vegetariana are si ea variantele ei:&lt;br /&gt;&lt;/div&gt;&lt;ul style="text-align: justify;"&gt;&lt;li&gt;Vegetarianismul - in care nu se consuma carne si produse din carne, oua si produse lactate, dar se consuma miere.&lt;/li&gt;&lt;li&gt;Lacto-ovo vegetarianismul – dieta care exclude din alimentatie doar produsele din carne permitand consumul de lactate, oua si miere.&lt;/li&gt;&lt;li&gt;Lacto vegetarianismul – dupa cum ne indica si numele, pe langa produse de origine vegetala in abordarea acestei diete se consuma si produse lactate si miere.&lt;/li&gt;&lt;li&gt;Ovo vegetarianismul – dieta bazata pe consumul de produse de origine vegetala si oua&lt;/li&gt;&lt;li&gt;Veganismul – as numi-o cea mai “stricta” varianta a vegetarianismului deoarece se bazeaza doar pe consumul de alimente de origine vegetala, fiind excluse toate produsele de origine animala (inclusiv mierea).&lt;/li&gt;&lt;/ul&gt;&lt;div style="text-align: justify;"&gt;Dietele enumerate mai sus sunt dietele vegetariene principale. Lista poate continua cu alte practici associate vegetarinismului, bineinteles ca va voi oferi si cateva exemple:&lt;br /&gt;&lt;/div&gt;&lt;ul style="text-align: justify;"&gt;&lt;li&gt;Fructarianismul – dieta constituita numai din fructe, nuci, seminte etc.&lt;/li&gt;&lt;li&gt;Pescetarianismul – dieta semi-vegetariana care include pestele, stridiile, crustaceele.&lt;/li&gt;&lt;li&gt;Flexitarianismul – dieta vegetariana care permite exceptii ocazionale.&lt;/li&gt;&lt;/ul&gt;&lt;div style="text-align: justify;"&gt;Am sa fac o scurta lista si cu nutrientii (foarte importanti pentru organismul uman) al caror aport este putin mai greu de asigurat daca adoptam o dieta vegertariana.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Vitamina B12&lt;/span&gt; – o putem obtine din produse lactate, oua, produse alimentare imbogatite cu vitamine (cereale, orez, produse de panificatie), drojdie nutritionala (de regula drojdia de bere Saccharomyces cerevisiae insa dezactivata)&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Vitamina D&lt;/span&gt; – din lapte, suc de portocale imbogatit cu vitamina D&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Calciu&lt;/span&gt; -  produse lactate, produse vegetale cu frunze de culoare verde inchis, oua, tofu, cereale&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Proteine&lt;/span&gt; – produse lactate, oua, tofu si alte produse din soia, nuci&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Fier&lt;/span&gt; – oua, fructe uscate, cereale integrale, legume cu frunza verde, cereale si produse de panificatie imboigatite cu fier&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Zinc&lt;/span&gt; – germeni de grau, nuci, cereale imbogatite, seminte de dovleac.&lt;br /&gt;&lt;br /&gt;Decizia de a adopta un regim vegetarian, in oricare din variantele sale, este o decizie greu de luat deoarece presupune o schimbare nu as spune radicala dar “consistenta” a regimului alimentar. Asadar ce ne-ar putea motiva sa devenim vegetarieni? Unul dintre cele mai importante argumente pro-vegetarianism este bazat pe beneficiile pe care acest stil de viata ni le poate aduce din punct de vedere al sanatatii. Tind sa fiu de acord cu aceasta idée, dar sustin ca aceasta schimbare (ca orice lucru bun si constructiv) trebuie facuta in cunostinta de cauza (ceea ce presupune o informare prealabila) si cu responsablitate si dedicare.&lt;br /&gt;&lt;br /&gt;Daca motivul imbunatatirii sanatatii este unul legat, pentru fiecare dintre noi, de propria persoana vreau sa va aduc in atentie si faptul ca exista diverse modalitati in care vegetarianismul poate schimba in bine si vietile celor din jurul nostru. Suferinta animalelor, necesitatea abatoarelor, macelurile, unele boli, poluarea mediului cauzata de cresterea animalelor…toate acestea pot fi reduse…si banuiesc ca v-ati dat seama si cum. Consecintele ecologice ale cresterii productiei mondiale de carne sunt enorme. Suprafetele de pamant utilizate pentru cultivarea furajelor ar putea fi folosite pentru cultivarea legumelor. In Elvetia 67% din terenul agricol este folosit pentru a hrani animalele de ferma. Cresterea animalelor duce in mod cert si la poluarea apei, a solului si a aerului.&lt;br /&gt;&lt;br /&gt;Inainte de a incheia vreau sa precizez ca eu nu sunt vegetariana, inca nu am reusit sau incercat sa adopt un stil de viata vegetarian dar pentru ca pic cu pic se face marea am hoatarat ca de acum inainte macar o zi pe saptamana sa mananc vegetarian! E un bun inceput si consider ca toti suntem si ne suntem datori sa incercam acest lucru. Spun aceste lucruri deoarece inainte sa incep sa fac putin research pe aceasta tema eram ceva mai ok cu idea de a consuma carne, dar am dat peste informatii care mi-au schimbat putin viziunea asupra problemei. Am sa incerc sa va raspund in cateva randuri la aceasta intrebare "arzatoare".&lt;br /&gt;&lt;/div&gt;&lt;div style="FONT-FAMILY: georgia; TEXT-ALIGN: justify" align="justify"&gt;&lt;br /&gt;Substanta poarta denumirea uzuala de capsaicina si este componenta activa a ardeilor iuti (plante care apartin genului Capsicum). Este un iritant pentru majoritatea mamiferelor (inclusiv omul) si produce o senzatie de arsura in orice tesut cu care intra in contact. Este, in stare pura, un compus incolor, inodor si hidrofob. Exista compusi inruditi cu capsaicina care se numesc capsaicinoizi. Cantitatile cele mai mari se gasesc in tesutul care mentine samburii, in plantele apartenente genului Capsicum. Desi se gaseste in jurul samburilor substanta nu este produsa de catre acestia. Samburii sunt dispersati de catre pasari deoarece acestea nu au receptori care sa detecteze capsaicina nefiind iritate de acest compus. Ardeii iuti ofera alimentelor un grad mai mare de "caldura" (produc un efect de arsura la nivelul membranelor mucoase). Gradul de "caldura" al alimentelor se masoara pe scara Scoville. Numarul de unitati Scoville de iuteala (SHU - Scoville Heat Units) indica prezenta capsaicinei in diferite cantitati. Exista doua teste care se efectueaza pentru a determina aceste cantitati: testul organoleptic Scoville si metoda Gillett ( cromatografie lichida de inalta performanta). In metoda Scoville se utilizeaza o solutie de extract de ardei iute diluata in sirop de zahar pana cand iuteala nu mai este detectata de catre un anumit numar de persoane (de regula 5) la degustarea solutiei. Numarul de unitati Scoville se determina in functie de cate dilutii sunt necesare pana cand capsaicina nu mai poate fi detectata organoleptic. Testul este imprecis deoarece se bazeaza pe subiectivitatea umana. Cea de-a doua metoda (HPLC - high performance liquid chromatography) se refera la utilizarea unui aparat care detecteaza compusi chimici si le determina cantitatea. In cazul acestei metode rezultatele obtinute nu sunt in unitati Scoville dar se pot converti prin utilizarea unei formule matematice. Ardeii care nu contin capsaicina deloc au valoarea zero pe scara Scoville iar capsaicina pura o valoare cuprinsa intre 15.000.000 - 16.000.000 de unitati. Preparatul se umfla iar continutul de proteine scade cu pana la 50% doban&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;dind un aspect gelatinos. Dupa aceasta etapa preparatul are un pH cu valori cuprinse intre 11 si 12, pentru a deveni comestibil &lt;/span&gt;&lt;span style="font-family:georgia;"&gt;este necesar inca un tratament care consta in mentinerea s&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;a in apa rece pentru inca 4&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;-6 zil&lt;/span&gt;e (apa fiind si de aceasta data schimbata zilnic). Se gateste cu ajutorul aburului timp de 20-25 minute sau in cuptor acoperit cu folie de aluminiu timp de 40-50 minute. Se recomanda utilizarea ustensilelor confectionate din otel inoxidabil si curatarea imediata a acestora dupa folosire. Larvele s&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;unt introduse in &lt;/span&gt;&lt;span style="font-family:georgia;"&gt;mod deliberat pentr&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;u a induce un nivel avansat de fermentare. Consistenta sa este fina iar larvele sunt indepartate de unii consumatori, iar de altii nu, deoarece daca sunt "deranjate" pot sari la o distanta de 15 cm. In timpul fermentarii ouale mustelor sunt introduse, d&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;in ele ies larvele care mananca din branza iar acizii din tractul lor digestiv descompun grasimile. Casu marzu se consuma numai daca larvele sunt inca vii deoarece este considerat toxic dupa ce o parte din larve au murit. Casu marzu este interzisa datorita efectelor negative pe care le poate avea asupra sanatatii, insa exista locuri in care se produce si se poate achizitiona. Fructul contine cantitati mari de acizi grasi nesaturati care protejeaza arterele si reduc colesterolul si este, deasemenea, bogat in acid folic, vitamina B6, potasiu si alte vitamine si elemente minerale (vitamina C, E, fier, cupru, zinc, magneziu, fosfor). Valoarea nutritiva a fructului variza intre 130 si 360 de calorii per 100 de grame.&lt;br /&gt;Se presupune ca avocado are proprietati afrodisiace (adica stimuleaza impulsurile sexuale), iar dealungul istoriei anumite persoane cu o imagine mai "pudica" refuzau sa il achizioneze sau sa il consume. Aztecii il denumeau "fructul fertilitatii".&lt;br /&gt;&lt;br /&gt;Avand in vedere ca avocado este un fruct relativ nou pe piata romaneasca si cu un pret destul de ridicat, daca doriti sa il introduceti in dieta dumneavoastra va recomand sa alegeti fructele bine coapte, care pot fi apasate usor cu degetul si care nu au pete negre sau portiuni degradate. Sosul de soia se obtine prin fermentarea boabelor si contine cantitati importante de ant&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;ioxidanti.&lt;br /&gt;Consumul de soia poate avea multe efecte benefice asupra sanatatii cum ar fi: scaderea colesterolului rau, imbunatatirea memoriei, reglarea func&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;tiilor intestinale, reducerea efectelor negative ale menopauzei, reducerea hipertensiunii a&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;rteriale, mentinerea densitatii osoase, intarirea sistemului imunitar si reducerea inflamatiilor. Consumul de soia nu inlocuieste, insa, tratamentul standard aplicat in cazul acestor afectiuni. Soia contine izoflavone care sunt fitoestrogeni cu actiune "slaba" si este contraindicata in cazul femeilor insarcinate deoarece poate afecta dezvoltatea embrionului sau a sistemului endocrin al fatului. Inclusa in alimentatia copiilor sub 3 ani poate avea efecte negative asupra dezvoltarii glandei tiroide.&lt;br /&gt;Daca nu doriti sa consumati soia ca aliment puteti oricand opta pentru creioane, lumanari sau produse de ingrijire a corpului din soia.&lt;br /&gt;&lt;br /&gt;Astept ca deobicei pareri despre postare (pro sau contra) si comentarii. Va voi vorbi putin despre cea mai scumpa cafea. Se presupune ca pretul acestei cafele este intre 120$ si 600$ per jumatate de kilogram si se vinde in Japonia si Statele Unite ale Americii. Impresionant, nu? Se numeste "kopi luwak" - "kopi" este cuvantul indonezian pentru cafea, iar "luwak" este denumirea locala a unei specii de zibeta (in engleza Asian Palm Civet). Si acum am sa fac bineinteles si legatura intre cafea si "animalut" - alaturi de insecte, mamifere mici, reptile mici, oua si alte fructe, boabele de cafea fac parte din dieta zibetei. Astfel in materiile fecale ale "animalutului" se gasesc si boabe de cafea partial digerate. Acestea se colecteaza, se spala si apoi se prajesc usor pentru a nu se distruge aromele complexe dobandite. Se presupune ca anumite enzime din stomacul "animalutului" descompun proteinele care ii confera cafelei un gust amar ceea ce duce la obtinerea unei cafele cu o aroma deosebita.&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;span style="font-family:georgia;"&gt;Am postat si o poza cu "animalutul" doar ca sa vedeti ce ochisori draguti are.
